Okonomiyaki is the proper name. And it is DELICIOUS!
It is often referred to as 'Japanese pizza' in North America. Nothing like pizza though. It has a pancake-esque batter that is filled with shredded cabbage and pretty much anything else you want. Beef, chicken, shrimp, bacon. Yesterday's leftovers. It's all good.
I did vary the recipe somewhat...actually, a lot. But only because I live very close to the end of the earth, in an "Asian Food Store" sense.
Nagaimo. Also know as Chinese yam. Not gonna happen here. Unless someone can prove me wrong. I was pretty sure I wouldn't find it at Kevin's No Frills, so I did spread out my search quite a bit. No luck so far. In the meanwhile, I substituted potato and it worked out quite well!
Katsuobushi, benishoga and anori. I am pretty sure you can find all of these here, but I didn't have any so I just left them out.
Finally, I substituted barbecued pork for the bacon, just because I had a lot left over from yesterday supper. And I added a bit of cheese.
If you haven't gathered by now, this is a VERY FLEXIBLE recipe! There was a whole lot of 'leave that out' and 'add that instead' going on in the kitchen and it all worked out fine. Kinda like pizza!
Such is the charm of Yummy Yummy Yuckie! This...and the fact that it is served at a table that has a grill in the middle! Makes for a very social munchfest. Add a few beer and you have the makings of a great meal. I've included two pictures from an okonomiyaki restaurant we went to in Osaka.
